- 1 sheet puff pastry thawed
- 1 cup fresh spinach chopped
- ½ cup feta cheese crumbled
- 1 egg beaten (for egg wash)
- 1 tbsp olive oil
- ½ tsp dried oregano
- ¼ tsp salt adjust to taste
- ¼ tsp black pepper
- ¼ tsp garlic powder optional
For Garnish (Optional):
- Sesame seeds or black seeds
- Extra feta crumbles
- Fresh parsley
Step 1: Prepare the Filling
In a mixing bowl, combine chopped spinach, feta cheese, olive oil, oregano, salt, black pepper, and garlic powder (if using).
Stir well to mix the ingredients evenly.

Fold the pastry into triangles or rectangles, pressing the edges down with a fork to seal.
Brush the tops with beaten egg for a golden, flaky finish.
Sprinkle with sesame seeds or extra feta crumbles for extra texture.
Step 4: Air Fry the Pastries
Preheat the air fryer to 375°F (190°C) for 2 minutes.
Arrange the pastries in a single layer in the air fryer basket (cook in batches if needed).
Air fry for 10-12 minutes, until golden brown and crispy.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 3-4 minutes.
- Make Ahead: Assemble the pastries and freeze before air frying. Cook from frozen at 375°F (190°C) for 14-15 minutes.
- No Air Fryer? Bake in a conventional oven at 400°F (200°C) for 20 minutes.
